It’s amazing what having quite a bit of time at hand does to a human being. Though I am not a chef, I can cook a number of Romanian dishes, my mom’s recipes. This is the food I grew up with and I really like it. It’s interesting how we feel a deep connection to the food we grew up with and, when we’re faced with feeding ourselves, we go back to what feels familiar. At least I do. So, a few weeks ago, I called my mom and I got some more recipes for dishes I used to eat at home. I wanted to experiment and cook more dishes since I got tired of eating only the ones I knew how to make.
The recipe I chose for you today is one for a vegetables potato soup “Bors cu Cartofi” from Bucovina, the region I am from in Romania. This dish would be great to serve during spring. 😊
Ingredients (for 7-8 lbs of soup):
- 3 onions
- 6-7 carrots
- 3-4 pieces of celery
- Parsley
- Lovage
- 7-8 potatoes
- 1 lime
- Salt & paper
Preparation:
Dice the onions in small pieces and let them heat for 5 mins in a little bit of oil and water (1-2 cups). Separately dice the carrots, celery, parsley and add them on top of the onions. Let them heat for 5 mins, then add 7-8 lbs of water on top of the mix.
Add salt and pepper to taste.
Add the cut potatoes and the lime juice from one freshly squeezed lime
Let it cook for 40-45 minutes. At the end, add a few leaves of lovage for extra flavor.
Serve it while hot with sour cream on top ( optional).
